It was after working around the world, in places such as Italy, Australia and his home country France. But it was in 2023 when Clément relocated Bonyvresse to Sainte-Croix-aux-Mines, in central Alsace, where all vinification took place.\u003c\/p\u003e\n\u003cp\u003eThe fruit comes from hand harvested organic or biodynamic grapes and are naturally vinified, spontaneous fermentation, no filtration or fining, and little to no added sulphites.
