Originally started in 2020, Clément began his journey in the Pyrénées-Orientales region with the purchase of organic grapes thanks to Domaine du Possible. It was after working around the world, in places such as Italy, Australia and his home country France. But it was in 2023 when Clément relocated Bonyvresse to Sainte-Croix-aux-Mines, in central Alsace, where all vinification took place.
The fruit comes from hand harvested organic or biodynamic grapes and are naturally vinified, spontaneous fermentation, no filtration or fining, and little to no added sulphites. Since his 2025 vintage, Clément has been able to lease a 0,5 hectares plot of Pinot Gris vines in the Haut-Rhin region, with another plot near Ribeauvillé.
It will be immensely satisfying to follow Clément’s journey to fixing his winemaking style, and settling into his home and vineyards.
